Last night Joel and I were reading in bed (not a euphemism - we both actually like to read) when he suddenly sat up and said,
"I'm feeling snacky. Do we have any beef and cabbage rolls?"
Me: ...
"What about a quiche?"
Me: ... (But this time with an eyeroll).
What we did have was the following:
- Half a leftover tomato
- A tiny block of raw milk cheddar
- Some pre-cooked chicken strips from Trader Joe's (which Joel bought! I never EVER buy convenience foods. It's bad enough I didn't make the tortillas from scratch.)
- Flour tortillas (store bought) (obviously with shame)
- A small can of diced green chilies (which was lame because the chickens had just knocked one of my jalapenos off the bush and I forgot it was in the fridge...)
I heated a pan with a little bit of olive oil, warmed the chicken, added some chili flakes and a can of green chilies and FIVE WHOLE MINUTES LATER (according to the time stamps from the photos), we had tacos.
In bed.
Man-pleasing midnight snack FTW!
(And almost as fast as you can say "Fourth Meal.")
